Garlic Roasted Butternut Squash

    Ingredients
  • 1 Butternut Squash (3 pounds), peeled and cubed 1/2 inch
  • 3 ounces Garlic, fresh chopped
  • 1/4 teaspoon Salt, kosher
  • 5 ounces Cranberries, dried
  • 10 ounces Yellow Onion, halved, 1/4 inch julienne
  • 1 ounce Canola Oil
  • 1/4 teaspoon Oregano Leaves

    Directions
  1. In large bowl add squash, onions, garlic and seasonings.
  2. Toss well to coat.
  3. Place on sheet pan.
  4. Roast in 350 degree oven 30-40 min.
  5. Remove from oven and add cranberries, toss well and serve as a side dish with your Thanksgivings dinner
