Tuna Burgers

    Ingredients
  • 1 can (9 3/4 oz.) Tuna, drained
  • 1/2 cup Cracker Crumbs
  • 2 Eggs, slightly beaten
  • 1 tablespoon Green Onion, finely chopped
  • 1 teaspoon Lemon Juice
  • 1/2 teaspoon Salt
  • 1/4 teaspoon Lemon Pepper
  • 1/4 teaspoon Chili Powder
  • Dash Hot Sauce
  • Lettuce Leaves
  • 4 Hamburger Buns, split and toasted
  • 2 Tomatoes, sliced

    Directions
  1. Heat oven to 350.
  2. Mix all ingredients except lettuce, buns and tomatoes.
  3. Press evenly in greased loaf pan, 8 1/2 x 4 1/2 x 2 1/2 inches.
  4. Bake until firm and juicy, about 30 minutes.
  5. Cool in pan about 2 minutes, and then remove from pan.
  6. Cut loaf into fourths; split each fourth horizontally in half.
  7. Place lettuce on each bun half; top with tuna and a tomato slice.
  8. 2 open-face burgers per serving
