Cherry-Glazed Lamb

    Ingredients
  • 1/4 cup All-purpose Flour
  • 2 teaspoons Salt
  • 1/4 teaspoon Pepper
  • 4 Lamb Shanks (3/4 pound each)
  • 1/3 cup Shortening
  • 3/4 cup Water
  • Cherry Glaze (below)

    Directions
  1. Mix flour, salt and pepper; coat meat with flour mixture.
  2. Melt shortening in Dutch oven; brown meat over medium-high heat.
  3. Drain off fat.
  4. Pour water into Dutch oven.
  5. Cover and bake in 325 degree oven for 1 hour.
  6. Drain off all but 1/2 to 1 inch of drippings from Dutch oven.
  7. Spoon 1/3 of the Cherry Glaze on meat.
  8. Bake uncovered 30 minutes, spooning a small amount of glaze on meat every 10 minutes.
  9. Serve remaining glaze with meat.
  10. Cherry Glaze: Combine 1 can (21 ounces) cherry pie filling, 1/4 cup vinegar and 1/4 tsp. each salt, cinnamon, nutmeg and cloves in saucepan. Heat to boiling, stirring occasionally. Reduce heat; simmer 2 minutes. Keep warm over low heat while glazing meat.
