Potatoes with Garlic and Chilies

Spicy Indian version of French Fries (not deep fried)
- Cut potatoes to the thickness of French fries, but half their length.
- Use a large nonstick skillet. Heat oil over medium heat. Then add the mustard seeds and cumin. When the seeds start popping, add the garlic and allow this to brown lightly.
- Remove the pan from heat and add the chili powder, turmeric and potatoes and place the pan back on the heat. Stir and turn heat to medium.
- Add the salt, stir and mix, cover the pan, cook for 3-4 minutes and stir again. Continue to do this until all potatoes are cooked and lightly browned.
- Remove fom heat.
