Home Style Ruby Chicken Salad

Cold salad, especially good on a hot day!
  • 3 Medium Ruby Red Grapefruit, chilled
  • 2 cups Cooked Chicken
  • 2 teaspoons Salt
  • 1/2 cup Yogurt
  • 1/4 cup Mayonnaise
  • 1/8 to 1/4 teaspoon Dill Weed
  • 1/2 cup Celery, chopped
  • 4 to 5 tablespoons Green Onions, chopped
  • 1/4 cup Ripe Olives

Add Ingredients to Shopping List

  1. Cut grapefruit in half crosswise; cut around each section to loosen from membrane.
  2. Remove sections from shell and cut into bite-size pieces; drain well.
  3. Scrape remaining membrane from shells.
  4. Refrigerate until ready to use.
  5. In medium bowl, combine yogurt, mayonnaise, 1 tsp salt and dill weed; stir well.
  6. Add grapefruit, chicken and remaining ingredients; toss lightly.
  7. Spoon about 3/4 cup chicken mixture into each grapefruit shell.
  8. Cover and chill until ready to serve.
