Cinnamon Raisin Jumbles

These cookies have crispy edges, soft, chewy centers and are perfect for filling the cookie jar for after-school snacks.
    Ingredients
  • 1/2 cup Soft Butter or Margarine
  • 1 cup Sugar
  • 1 teaspoon Vanilla Extract
  • 1 Egg
  • 1 3/4 cups All-purpose Flour
  • 1 teaspoon Baking Powder
  • 1/2 teaspoon Salt
  • 1 teaspoon Cinnamon
  • 1/3 cup Milk
  • 1/2 cup Raisins
  • 1/2 cup Walnuts, chopped
  • 1/2 cup Flaked Coconut

    Directions
  1. In large mixing bowl, cream butter with sugar and vanilla.
  2. Add egg.
  3. Beat until light.
  4. Stir together flour, baking powder, salt and cinnamon.
  5. Add to creamed mixture alternately with the milk.
  6. Stir until a stiff dough forms.
  7. Blend in raisins, nuts and coconut.
  8. Drop rounded teaspoonful of dough on lightly greased, shiny cookie sheets.
  9. Bake at 400 degrees for 10 minutes or until cookies are browned around the edges, pale in the center, but firm to the touch.
