Pasta with Fresh Vegetable Sauce

A terrific make-ahead, this dish is excellent served immediately after it is prepared or it can be refrigerated and served later.
    Ingredients
  • 1 package (10 oz.) Pasta or Noodles
  • Boiling Salted Water
  • 1/3 cup Olive or Salad Oil
  • 2 Medium Tomatoes, peeled, seeded, diced
  • 1 Bunch Green Onions, thinly sliced
  • 2 Stalks Celery, thinly sliced
  • 1 Small Carrot Shredded
  • 1 Green Pepper, chopped
  • 1 Small Cucumber, peeled, seeded and diced
  • 1 Small Zucchini, diced
  • 1/4 cup Fresh Basil, chopped or 2 tablespoons dried basil leaves
  • 1/2 to 1 teaspoon Salt
  • 1/8 teaspoon Black Pepper
  • 1/8 Additional Olive Oil (optional)

    Directions
  1. Cook pasta in salted boiling water about 6 to 8 minutes or until al dente.
  2. Drain.
  3. Rinse under cold water.
  4. Drain well.
  5. Place into large mixing bowl.
  6. Drizzle oil over pasta, tossing well.
  7. Transfer to wide serving dish.
  8. Sprinkle with the vegetables and basil.
  9. At the table, add salt, black pepper to taste and more olive oil, if used.
  10. Garnish with parsley and/or some green peas.
