Baked Omelette

Serve this Cheddar and bacon-topped omelette with toasted English muffins and strawberry jam for brunch or with a green salad and French bread for a light dinner
    Ingredients
  • 6 Eggs
  • 2/3 cup Milk
  • 1/4 teaspoon Salt
  • 1/8 teaspoon Black Pepper
  • 1 1/2 cups Cheddar Cheese, shredded
  • 1 Green Onion, thinly sliced
  • 3 Slices Bacon, cooked and crumbled
  • 1 tablespoon Butter or Margarine
  • 1 tablespoon Parmesan Cheese Additional Cooked Bacon for Garnish, optional

    Directions
  1. Beat eggs with a wire whisk in bowl until smooth.
  2. Beat in milk.
  3. Stir in seasonings, Cheddar cheese, onion and bacon.
  4. Melt butter in a 9-inch frying pan or omelette pan.
  5. Pour egg mixture into pan.
  6. Sprinkle with Parmesan cheese.
  7. Bake at 400 F for 20 minutes or until set and golden.
  8. Garnish with additional bacon
