  • 8 Eggs
  • 2 tablespoons Milk
  • 1/2 cup Onion, chopped
  • 1/2 cup Each Green Pepper and Green Chiles, diced
  • 1/2 cup Firm Tomatoes, diced
  • 1 cup Cheddar Cheese, shredded
  • 1 tablespoon Butter or Margarine
  • 1 tablespoon Cream Cheese
  • Sour Cream, chopped parsley and chile salsa (optional)

Add Ingredients to Shopping List

  1. Beat eggs with milk until light yellow in color.
  2. Add onion, green pepper, chiles, tomatoes and cheese.
  3. Melt butter in skillet over medium heat.
  4. Add egg mixture.
  5. Scramble to desired firmness.
  6. Just before removing from heat, stir in cream cheese until melted.
  7. Serve with dollops of sour cream, chopped parsley and chilled salsa, if desired.
