- Beat eggs with milk until light yellow in color.
- Add onion, green pepper, chiles, tomatoes and cheese.
- Melt butter in skillet over medium heat.
- Add egg mixture.
- Scramble to desired firmness.
- Just before removing from heat, stir in cream cheese until melted.
- Serve with dollops of sour cream, chopped parsley and chilled salsa, if desired.
