Spinach Quiche

This is a variation of the popular classic, Quiche Lorraine.
    Ingredients
  • 1 8 or 9-inch Pastry Shell, partially baked
  • 1 tablespoon Dijon-style Mustard
  • 2 tablespoons Green Onion, minced
  • 2 tablespoons Butter or Margarine
  • 1 package (10 oz) Frozen Chopped Spinach, cooked and drained
  • 1/2 teaspoon Salt
  • Dash Pepper
  • Dash Nutmeg
  • 1 cup Cottage Cheese
  • 3 Eggs
  • 1/2 cup Whipping Cream
  • 1/4 cup Swiss Cheese, shredded
  • 1 tablespoon Soft Butter or Margarine

    Directions
  1. Brush cooled pastry shell with mustard.
  2. Sauté green onions in butter.
  3. Add spinach and stir over moderate heat to evaporate moisture.
  4. Stir in salt, pepper, nutmeg and cottage cheese.
  5. Blend in eggs and cream.
  6. Pour into pastry shell.
  7. Sprinkle with cheese; dot with butter.
  8. Bake at 375 degrees for 25 to 30 minutes or until set.
