Red Cabbage Slaw

This colorful slaw has the added attraction of cashews and an Oriental spice.
    Ingredients
  • 1 1/4 cups White Cabbage, shredded
  • 1 1/2 cups Red Cabbage, shredded
  • 1/4 cup Green Onions, chopped
  • 1/2 cup Green Pepper, thinly sliced
  • 1 cup Cashews, roasted, optional
  • 1/2 cup Rice Vinegar
  • 2 tablespoons Sesame Oil or Salad Oil
  • 1 1/2 teaspoons Cumin
  • 1 tablespoon Lemon Rind

    Directions
  1. Combine cabbages, onions, green pepper and cashews.
  2. In separate bowl, mix vinegar, oil, cumin and lemon rind.
  3. Pour over vegetables.
  4. Toss to blend thoroughly.
  5. Cover and chill for 2 to 3 hours before serving.
  6. Before serving, garnish with extra sliced green pepper and slivered lemon rind.
