    Ingredients
  • 3/4 cup Bulgur Wheat
  • 1 teaspoon Salt
  • 1 1/2 cups Boiling Water
  • 1 pound Tomatoes, chopped
  • 1/2 Cucumber, diced
  • 3 to 4 Green Onions
  • 1/4 cup Olive Oil
  • 1/4 cup Lemon Juice
  • 2 tablespoons Fresh Mint, chopped
  • 4 tablespoons Fresh Parsley, chopped
  • 2 Cloves Garlic, minced

    Directions
  1. Mix the bulgur wheat with the salt, pour over the boiling water, and leave stand 15 to 20 minutes. All the water will then be absorbed.
  2. Mix together the olive oil, lemon juice, mint, parsley and garlic for the dressing and pour over the soaked bulgur. Fold in lightly with a spoon.
  3. Leave for 2 hours or overnight in refrigerator. Add the tomatoes, cucumber, and green onions. Mix together and serve.
