Memphis-Style Ribs
  • 2 tablespoons Brown Sugar
  • 1 tablespoon Paprika
  • 1 teaspoon Smoked Paprika
  • 1 teaspoon Onion Powder
  • 1/2 teaspoon Garlic Powder
  • 1/2 teaspoon Kosher Salt
  • 1/2 teaspoon Pepper
  • 2 (2-lb) Slabs Pork Baby Back Ribs
  • Barbecue Sauce (optional)

  1. In a small bowl combine brown sugar, paprika, smoked paprika, onion powder, garlic powder, salt and pepper; set aside.
  2. Preheat grill to medium (300-350 deg F). Rub sugar mixture on each rib slab. Cut each slab into 3-rib portions; set aside. Cut 2 (24-inch) sheets of foil. Coat one side of each sheet with nonstick cooking spray. Place 2 ice cubes on the center of each sheet. Place half the rib portions evenly on each sheet. Bring up opposite edges of foil over ribs; double-fold to seal.
  3. Place foil packets on grill rack. Grill, covered, 1 hour to 1 hour and 15 minutes or until meat is tender and pulls away from bone. If desired, serve with barbecue sauce.
