- In a small bowl combine brown sugar, paprika, smoked paprika, onion powder, garlic powder, salt and pepper; set aside.
- Preheat grill to medium (300-350 deg F). Rub sugar mixture on each rib slab. Cut each slab into 3-rib portions; set aside. Cut 2 (24-inch) sheets of foil. Coat one side of each sheet with nonstick cooking spray. Place 2 ice cubes on the center of each sheet. Place half the rib portions evenly on each sheet. Bring up opposite edges of foil over ribs; double-fold to seal.
- Place foil packets on grill rack. Grill, covered, 1 hour to 1 hour and 15 minutes or until meat is tender and pulls away from bone. If desired, serve with barbecue sauce.
