My Brother Oog's BBQ GF Pasta Al Arabiata

Fantastic, easy to make Gluten Free pasta recipe!
  • 6 tablespoons Olive Oil
  • 1/2 Red Onion, chopped
  • 1/2 Green Bell Pepper, chopped
  • 1/2 Yellow Bell Pepper, chopped
  • 1/4 cup Vegetable Stock
  • 1/4 cup My Brother Oog's Spicy Bbq Sauce
  • 1/4 cup San Marzano Crushed Tomatoes
  • 1/2 Squash, sliced
  • 1/2 Zucchini, sliced
  • 2 tablespoons Chopped Cilantro
  • 1/2 pound Penne Pasta
  • Salt and Pepper to Taste

Add Ingredients to Shopping List

  1. Cook pasta as directed on box.
  2. In sautée pan, sautée onion and peppers in olive oil when tender add stock, BBQ sauce and San Marzano tomatoes. Bring to a boil add squash and zucchini - cook until tender.
  3. Add cooked pasta, stir until coated top.
  4. Top with cilantro freshly grated parmesan.
