Turkey Stuffed Green Peppers

    Ingredients
  • 1 pound Ground Turkey
  • 1/2 cup Instant Rice
  • 1/2 cup Carrots, grated
  • 1/4 cup Onion, chopped
  • 3 tablespoons Parsley, chopped
  • 1 to 2 Cloves Garlic, minced
  • 1 teaspoon Dried Oregano Leaves
  • 1/2 teaspoon Each Salt and Pepper
  • 1 can (8 oz.) Tomato Sauce
  • 2 Large Green Peppers

Directions
  1. In a medium bowl combine turkey, rice, carrot, onion, parsley, garlic, oregano, salt, pepper and tomato sauce. Mix to blend thoroughly.
  2. Cut each pepper in half lengthwise. Remove and discard seeds and membranes.
  3. Divide turkey mixture between peppers. Place in a baking dish and cover.
  4. Bake in a preheated 350°F oven for about 1 hr., or until the internal temperature reaches 165°F and the peppers are tender.
