Classic Chicken Parmesan

  • 4 Boneless Chicken Breasts, 5-6 oz each
  • 1/4 cup Flour
  • 2 Eggs, lightly beaten
  • 4 tablespoons Milk
  • 1 cup Seasoned Bread Crumbs
  • 4 tablespoons Olive Oil
  • 1/2 pound Sliced Mozzarella
  • 1/4 cup Reggiano Parmesan Cheese, freshly grated
  • 1 pound Angel Hair Pasta, cooked al dente and kept warm
  • 2 Jars of Your Favorite Pasta Sauce

  1. Position rack in the middle of oven and preheat to 400°.
  2. Pound chicken breast approximately 1/2 inch thick. Place the flour in a small bowl; place the egg and milk in a second small bowl. Place the bread crumbs in a third bowl, then dip each chicken breast in the flour, then the beaten egg and milk mixture and finally the bread crumbs. Complete the process until all the breasts are breaded.
  3. Add the olive oil to a skillet on medium heat and add the breaded chicken. Cook for 3-4 minutes on each side until golden brown. Remove the skillet from stove and add 1/4 cup of sauce over each breast and one slice of mozzarella cheese. Sprinkle with parmesan cheese and put skillet in the oven for 10-15 minutes.
  4. While the chicken is baking, heat a large skillet on medium heat add two tablespoons of olive oil. Then add your favorite tomato sauce and toss in your angel hair pasta. Top your plated pasta with some of the freshly grated parmesan.
