Herb Crusted Chicken

  • 1 package Uncle Ben's® Long Grain & Wild Rice Herb Roasted Chicken
  • Non-stick Cooking Spray
  • 4 Boneless Skinless Chicken Breasts (6 oz.)
  • 4 tablespoons Dijon Mustard
  • 3 tablespoons Panko (japanese breadcrumbs)
  • 3 tablespoons Salt-free Italian Herb Spice Blend (dried)
  • 1 cup Fresh Button Mushrooms, cut in half
  • 2 cups Fresh or Frozen Green Beans

Add Ingredients to Shopping List

  1. Prepare rice according to pkg. directions.
  2. Apply coating spray to large nonstick pan and heat over medium-high heat. Top each chicken breast with 1 Tbsp. Dijon mustard.
  3. Combine the panko breadcrumbs and dry herbs. Sprinkle mixture on top of mustard.
  4. Place chicken in sauté pan, herb-crusted side down first. Sear for 2 min. and turn chicken over.
  5. Reduce heat to medium and cook another 5 min. or until chicken is cooked through.
  6. When chicken is almost cooked, add mushroom halves to pan. Steam green beans in microwave or stovetop.
