  • 21/2 cups Chopped Cooked Chicken (rotisserie w/ no added seasonings)
  • 3 Stalks Celery, chopped
  • 1 cup Chopped Apple (about 1 large apple)
  • 1/4 cup Dried Cranberries (no sugar added)
  • 1/2 cup Nonfat Plain Greek Yogurt
  • 2 tablespoons Light Mayonnaise
  • 2 teaspoons Lemon Juice
  • Salt and Pepper to Taste

  1. Cook chicken until it reaches an internal temperature of 165°. Set aside and allow to cool.
  2. In a small bowl, stir together the yogurt, mayonnaise and lemon juice.
  3. Place the chicken, celery, apple and cranberries in a bowl and stir to combine. Add chicken mixture to the dressing and stir to mix well. Stir in the parsley if desired. Season to taste with salt and pepper.
  4. Serve on crackers, bread, or wrapped in a pita or tortilla.
