Check Yo' Self Chicken Salad

- Cook chicken until it reaches an internal temperature of 165°. Set aside and allow to cool.
- In a small bowl, stir together the yogurt, mayonnaise and lemon juice.
- Place the chicken, celery, apple and cranberries in a bowl and stir to combine. Add chicken mixture to the dressing and stir to mix well. Stir in the parsley if desired. Season to taste with salt and pepper.
- Serve on crackers, bread, or wrapped in a pita or tortilla.
