October’s cheese of the month is Irish Porter Cheddar Cheese. This cheese is made from pasteurized cow’s milk and Guinness-brewer Porter. When blended, a visually dramatic mosaic pattern is created, and other than its flavor, is the most attractive part of the cheese. It has a full, rich, tangy and chocolaty flavor with a pungent finish. It can be sliced and served with salad, on hors d’oeuvres or on a grilled cheese sandwich.
