The cheese of the month for September is Parmigiano Reggiano. It is known as the King of Cheese.
Parmigiano Reggiano is an unpasteurized hard cheese made from cow’s milk. The cheese has pleasantly sharp nutty taste and it’s appetizing flavor compliments almost any dish. Parmigiano Reggiano has been made for centuries in one area of Northern Italy; which is located in the rolling hills and green pastures comprising Reggio Emilia, Parma, Modena and portions of Bologna and Mantua. Under Italian law only cheese produced in these provinces may be labeled “Parmigiano-Reggiano”, and European law classifies the name as a protected designation of origin.
