Amy's Enchilada Verde, Spinach & Cheese Enchilada 10 oz

Enchilada dinner. Microwave or regular oven. Family owned since 1987. After the birth of our daughter Amy in 1987, we found there was little time to prepare the quality homemade food we normally ate. Realizing there were others like ourselves, we set up Amy's Kitchen to prepare delicious meals for those who care about the food they eat but are often too busy to cook. We use only the finest ingredients and prepare them with the same careful attention in our kitchen as you would in your own home. No meat, fish, shellfish, poultry, eggs or peanuts are ever used in any Amy's products. From our home to yours. Enchilada Verde is a specialty of one of our favorite restaurants (Tabachin) in Puerto Escondido, Mexico. This dish is very popular throughout Mexico; we think it will become an Amy's favorite. Amy's chefs have added a special touch to these enchiladas, blending organic spinach with Jack cheese and queso fresco (soft white cheese). The organic tomatillos, grown especially for Amy's, are cooked and blended with traditional spices to create this delicious sauce bursting with flavor. Organic brown rice mixed with sweet corn and tender carrots as well as our organic black beans, with bell peppers and chiles, complete this wonderful meal. Been provecha! (Enjoy your meal!)
