Made in our kitchen with only the finest ingredients, Amy's Light & Lean dishes taste great and are perfect for anyone looking for a delicious and light breakfast, lunch or dinner. Mexican food is one of our specialties, so when we created this unique Light & Lean dish we filled it with favorite Mexican ingredients. While low in fat and calories, it is just as tasty as our other Mexican dishes. We place a soft com tortilla between layers of organic brown rice, vegetables and sweet corn, then add layers of black beans and cheese. We cover it all with a blend of our tomatillo and ranchero sauces to make this flavorful, but nor too spicy, 230-calorie dish. All dairy ingredients are made with pasteurized, rBST-hormone-free milk. After the birth of our daughter Amy in 1987, we found there was little time to prepare the quality homemade food we normally ate. Realizing there were others like ourselves, we set up Amy's Kitchen to prepare delicious meals for those who care about the food they eat but are often too busy to cook.
